600 g (1 bag) Europe's Best® Summer Fruit Salad, defrosted
1 Granny Smith apple, cored, cut in 1/2 inch (1 cm) pieces
1 small red onion, thinly sliced (about 1 cup/250 mL)
125 mL (1/2 cup) diced sweet red pepper
2-Jan jalapeno pepper, seeded and chopped
22 mL (1 1/2 tbsp) lime juice
5 mL (1 tsp) coarse salt
2 green onions, coarsely chopped
1 avocado, peeled and diced (optional)
45 mL (3 tbsp) coarsely chopped cilantro
1. In a large bowl, combine Europe’s Best Summer Fruit Salad, apple, onion, red pepper and jalapeno pepper. Add lime juice and salt. Serve immediately or refrigerate for up to one hour.
2. Toss salad lightly. Transfer to a serving dish. Garnish with onions, avocado and cilantro.
Salad can be made three to four hours ahead, adding avocado just before serving.
