500g (1 pkg) Europe's Best® Green and Yellow Beans, frozen
15 mL (1 tbsp) olive oil
4 cloves of garlic, thinly sliced
salt and pepper to taste
15 mL (1 tbsp) fresh rosemary, chopped
15 mL (1 tbsp) lemon zest
1 clove of garlic, minced
1 mL (1/4 tsp) red pepper flakes (optional)
6 oz / 170 g (4) salmon fillets
1. Cook beans in boiling water for 1 minute, just until softened. Drain and rinse in cold water. Slice beans into 1/2" (2 cm) pieces. Dry well.
2. Heat olive oil in a large non-stick skillet over medium heat. Add garlic and cook until soft, about 1-2 minutes. Add beans, continue cooking until coated with olive oil and beans are heated through. Season with salt and pepper.
3. Combine all ingredients. Reserve.
4. Preheat oven to 400ºF (200ºC). Pat rub over salmon. Place on prepared baking sheet lined with parchment paper and bake for 15-20 minutes or until cooked through.
5. Place beans over salmon.
Serve the beans as a side dish with chicken or beef.
