Peaches, Bocconcini and Prosciutto Salad

Ingredients

Salad:
2L (8 cups) mixed salad greens (spring mix, arugula, baby spinach etc.)
90g (3 oz) prosciutto or bacon, cooked and diced
500mL (2 cups) Europe’s Best® Sun Ripe Harvest Peaches, thawed
250mL (1 cup) pearl sized bocconcini cheese, or regular bocconcini, sliced
50mL (1/4 cup) basil, chopped


Vinaigrette:
75mL (1/3 cup) white balsamic vinegar or apple cider vinegar
1 clove garlic
15mL (1 tbsp) honey
50mL (1/4 cup) Europe’s Best Sun Ripe Harvest Peaches, thawed
Salt and pepper to taste
30mL (2 tbsp) olive oil

Directions

1. Combine first 5 ingredients of the vinaigrette in blender. Add olive oil and blend until smooth. Arrange salad ingredients on platter and drizzle with dressing. Refrigerate any remaining dressing.
