Dark Chocolate Berry Trifle

283g (1) prepared Angel Food Cake, torn into cubes (about 6 cups/1.5L)
625mL (2 ½ cups) whipping cream, divided
170g (6 oz) high quality dark chocolate, chopped
2mL (1/2 tsp) vanilla extract
0.5mL (1/8 tsp) almond extract
600g (1 bag) Europe’s Best® Antioxidant Fruit Blend, frozen
50mL (1/4 cup) sliced toasted almonds, optional


  1. Combine ½ cup (125mL) cream and chocolate in medium sized microwaveable bowl. 
  2. Microwave at medium power, about 1 – 1 ½ minutes. 
  3. Stir until melted. Set aside to cool. 
  4. Meanwhile, beat remaining cream, vanilla and almond extracts in bowl of electric mixer until soft peaks form. 
  5. Fold in cooled chocolate mixture. 
  6. Place ¼ of angel food cake cubes in bottom of 12 cup (3L) trifle bowl. 
  7. Top with ¼ of frozen fruit and ¼ of whipped cream mixture. 
  8. Continue layering, ending with fruit. 
  9. Top with sliced almonds if using. 
  10. Let sit at room temperature, about 1 - 2 hours, until fruit thaws. 
  11. Chill in fridge, 2-3 hours longer to allow flavours to combine.
