Beans and Mushrooms with Garlic Breadcrumbs

500 g (1 bag) Europe's Best® Green and Yellow Beans, frozen
45 mL (3 tbsp) olive oil
30 mL (2 tbsp) butter
4 cloves garlic, chopped
375 mL (1 1/2 cups) sliced mushrooms
125 mL (1/2 cup) fresh or dried breadcrumbs
30 mL (2 tbsp) chopped fresh parsley
1 mL (1/4 tsp) chili flakes (optional)
2 mL (1/2 tsp) salt
1 mL (1/4 tsp) pepper


  1. Cook Europe’s Best Green and Yellow Beans according to package directions, until slightly undercooked. Drain well and pat dry.
  2. In a skillet, heat oil and butter over medium-high heat. Add garlic and mushrooms and cook 3 to 4 minutes. Add breadcrumbs, parsley, chili flakes, salt and pepper and cook 2 minutes until golden and crisp. Add cooked beans and toss to heat through and coat with breadcrumbs.


Dried breadcrumbs will crisp faster than fresh. Panko(dried) breadcrumbs are a good pantry item. They are available in most supermarkets.
