Zesty Cheddar Bean Bake

Ingredients

This easy, fresh update on a classic holiday potluck dish pairs beautifully with roasted turkey, beef or ham.

3 tbsp salted butter, divided
2 tbsp all-purpose flour
1 1/4 cupsmilk
2 tbsp each Dijon mustard and Louisiana-style hot sauce
1/4 tsp each salt and pepper
1 1/2 cups shredded old Cheddar Cheese, divided
1 pkg (500 g) Europe's Best Green and Yellow Beans®
1 cup coarse, fresh, whole wheat breadcrumbs (about 3 slices)
1/2 cup slivered almonds
2 green onions, finely chopped

Directions

  1. Preheat oven to 375°F (190°C). Melt 1 tbsp butter in a saucepan set over medium heat. Add flour; cook, stirring often, for 1 minute. Whisk milk with mustard, hot sauce, salt and pepper; gradually whisk into flour mixture. Cook, stirring constantly, until thickened.
  2. Remove from heat; stir in 1 cup cheese until smooth. Stir in beans until well coated. Transfer to a greased 8-cup casserole dish.
  3. Toss breadcrumbs with almonds, remaining cheese and onions. Melt remaining butter and toss with crumb mixture to combine. Sprinkle over bean mixture. Bake for 30 minutes or until bubbly and golden.

Makes 8 servings.
