Strawberry Salad with Goat Cheese and Pine Nuts

600g (1 bag) Europe’s Best® Country Sliced Strawberries, thawed and drained
454g (1lb) baby spinach leaves
50mL (¼ cup) goat cheese, crumbled
30mL (2 tbsp) toasted pine nuts
30mL (2 tbsp) fresh mint, chopped

50mL (¼ cup) sugar
2mL (¼ tsp) smoked paprika, or to taste
10mL (2 tsp) finely minced Spanish onion
125mL (½ cup) Spectrum® Extra Virgin Olive Oil
50mL (¼ cup) Spectrum® Organic Balsamic Vinegar
2mL (¼ tsp) Worcestershire sauce
Salt and pepper to taste


  1. Dressing: combine all ingredients. Gently toss strawberries with ½ cup (125mL) dressing. Reserve remaining dressing for another use. Arrange spinach leaves on serving platter. Top with strawberries, goat cheese crumbles and pine nuts and garnish with mint. Serve immediately.
