Strawberry Cheesecake Mousse

750mL (3 cups) Europe’s Best® Sliced Country Strawberries
50mL (1/4 cup) water
50mL (1/4 cup) granulated sugar
20mL (4 tsp) cornstarch
125mL (1/2 cup) light spreadable cream cheese
250mL (1 cup) The Greek Gods® Honey Flavoured or Honey Vanilla Flavoured Greek Style Yogurt
6 to 12 small mint leaves

1. Measure strawberries while frozen. Remove 6 slices; set aside for garnish. Chop the remaining strawberries into 1/4-inch (1 cm) dice. Place in a medium saucepan. Add water.

2. In a small bowl, mix together sugar and cornstarch; stir into strawberries. Bring strawberry mixture to a boil over medium heat, stirring constantly. Simmer for 2 minutes, stirring often. Remove from heat.

3. Spoon 2 tbsp (25 mL) of the strawberry mixture into each of six 125 mL canning jars; let cool. Transfer remaining mixture to a small bowl and refrigerate to cool.

4. In food processor (or with electric mixer in a large bowl), blend together cream cheese and yogurt until smooth. Blend in cooled strawberry mixture. Spoon mousse over strawberry mixture in jars (about 1/3 cup/75 mL per jar). Cover and refrigerate for at least an hour, until well chilled. Garnish with strawberry slices and one or two mint leaves.

Makes 6 servings

Note: For a portable snack or dessert, place metal 2-piece canning lids, or plastic lids on jars.
