300 g (1/2 bag) Europe's Best® Whole Country Strawberries, frozen
2 grapefruits, peeled, cut in segments
3 oranges, peeled, cut into segments
75 mL (1/3 cup) pomegranate seeds
50 mL (1/4 cup) dried Goji berries or cranberries
75 mL (1/3 cup) orange juice
50 mL (1/4 cup) maple syrup or honey
1 mL (1/4 tsp) ground cinnamon
1 mL (1/4 tsp) ground ginger
Pinch each of ground cloves and nutmeg
30 mL (2 tbsp) chopped pistachios or slivered almonds (optional)
1. Place Europe’s Best Sliced Country Strawberries in a serving bowl. Let defrost while preparing grapefruit and oranges. Add grapefruit and orange segments, pomegranate seeds and berries. Toss gently to combine.
2. In a bowl, whisk together juice, syrup, cinnamon, ginger, cloves and nutmeg. Pour over fruit. Let stand from 30 minutes to two hours. Garnish with chopped pistachios.
• Goji berries are available, dried, in supermarkets, health food stores and bulk food stores. They add a slightly tart flavour to dishes. Use in fruit and vegetable salads, soups, cereal and trail mix.
• Extra pomegranate seeds can be frozen for use in salads, beverages and garnishes.
