Sizzling Snapper Tacos with Peach Salsa

Serves: 4 tacos

Ingredients

Fish:

450g (1lb) boneless red snapper fillets
15mL (1 tbsp) barbecue seasoning
30mL (2 tbsp) Spectrum® olive oil
30mL (2 tbsp) lime juice
Salsa:

500mL (2 cups) Europe’s Best® Sun Ripe Harvest Peaches, chopped
30mL (2 tbsp) chopped cilantro
50mL (¼ cup) chopped red onion
1 to 2 jalapenos, finely diced
15mL (1 tbsp) lime juice
15mL (1 tbsp) sugar
Assembly:

4 medium flour tortillas
50mL (¼ cup) Spectrum® Canola Mayonnaise
15mL (1 tbsp) chipotle hot sauce
1 avocado, sliced
Garnishes: sliced red onions, lime wedges, chopped cilantro

Directions

  1. Sprinkle fish with barbecue seasoning. Drizzle with olive oil and lime juice. Set aside, 30-45 minutes.
  2. Meanwhile, combine all ingredients for salsa. Let sit 30 minutes or longer, to allow flavours to mingle.
  3. Preheat greased bbq grill to high. Grill fish, about 3-4 minutes per side, until flaky.
  4. Remove to a platter and chop into bite sized pieces.
  5. To assemble, combine mayonnaise and chipotle sauce. Spread each tortilla with 1 tbsp (15ml) mayonnaise mixture, followed by fish, avocado slices and salsa.
  6. Top with additional onions, cilantro and fresh lime juice, if desired.

Makes 2 portions (2 tacos per person)
