Peach Galette

Ingredients

250mL (1 cup) All Purpose Flour
50mL (¼ cup) cornmeal
15mL (1 tbsp) sugar
100mL (7 tbsp) cold butter
45mL (3 tbsp) sour cream
30mL (2 tbsp) cold water
1 bag Europe’s Best® Sun Ripe Harvest Peaches
15mL (1 tbsp) butter
50mL (¼ cup) All Purpose Flour
125mL (½ cup) sugar
1mL (¼ tsp) cinnamon
1 egg, beaten
Coarse sugar, optional

Directions

1. Combine first 4 ingredients in bowl of food processor. With machine running, add sour cream and cold water. Process until dough forms a ball. Remove, flatten into a disk and wrap in plastic wrap. Refrigerate 30 minutes. Meanwhile, preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper. Set aside. On a lightly floured surface, roll dough to 13” (31 cm) circle. Carefully transfer to prepared baking sheet. Mix fruit with next 4 ingredients. Place in centre of rolled dough, leaving a 1” (2.5cm) border. Brush border with beaten egg. Fold the borders over filling, allowing dough to pleat. Brush folded dough with beaten egg. Sprinkle with coarse sugar. Bake in preheated oven, 40-45 minutes. Remove from oven and let cool on pan, to allow juices to settle. Serve.
