Last Minute Vegetable Chow Mein

Ingredients

600 g (1 bag) Europe's Best® Zen Garden®, Frozen Vegetables
8 oz (1 package) fresh chow mein noodles, broken in shorter lengths

Sauce:
75 mL (1/3 cup) orange juice
45 mL (3 tbsp) tomato sauce or ketchup
45 mL (3 tbsp) oyster or hoisin sauce
30 mL (2 tbsp) soy sauce
30 mL (2 tbsp) lime or lemon juice
15 mL (1 tbsp) toasted sesame oil

Garnishes:
45 mL (3 tbsp) chopped fresh cilantro or parsley (optional)
2 green onions, chopped
10 mL (2 tsp) toasted sesame seeds

Directions

1.  For sauce, in a bowl, combine orange juice, tomato sauce, oyster sauce, soy sauce, lime juice and sesame oil. Set aside.
2.  In a large amount of boiling lightly salted water in a large saucepan, add the frozen vegetables and noodles. Cover, bring to a boil and cook for 2 minutes until noodles and vegetables are just cooked. Do not overcook. Drain well, shaking off excess water.
3.  Turn into a large serving bowl. Add sauce mixture and toss to coat noodles. Sprinkle with cilantro, onions and sesame seeds. Serve hot or at room temperature.

•   Wrap any leftover noodles well and refrigerate for up to two days or freeze for up to two weeks.
