Harvest Peach Cosmo

Ingredients

Ice cubes (prepare ahead):

4 peaches pieces from Europe’s Best® Sun Ripe Harvest Peaches
12 leaves of fresh Basil
1 cup water
Cosmo:

1 cup (8 oz) Europe’s Best® Sun Ripe Harvest Peaches, thawed & chopped
1 tsp fresh lemon juice
1 cup (8 oz) white cranberry juice
Plain ice
Peach Basil Ice Cubes (see recipe below)

Directions

Ice cubes:

  1. Fill an empty ice tray with a ¼ piece of peach and a small leaf of basil to fit each cube.
  2. Fill with water and freeze until ready to be used. (about 4 hours)

Cosmo:

  1. To a cocktail shaker filled with plain ice, add peaches, lemon juice and white cranberry juice.
  2. Shake and strain over Peach Basil Ice Cubes into martini glasses.
  3. Garnish each glass with a peach slice.

If you don’t have a cocktail shaker, use a jar with a secure lid to mix your drinks.

Makes 2 servings

 

Mix it Up Ideas: For a different twist, add 1 oz of Ginger Syrup (recipe below).

  1. Place 1 cup of sugar, 1 three inch piece of fresh ginger, finely diced, and 1 cup of water in a medium saucepan; bring to a boil.
  2. Reduce to a simmer, and cook about half an hour, until ginger flavour is quite strong.
  3. Let cool; strain before using.

Makes 1 cup.

Ginger syrup can be stored in the refrigerator for up to 4 weeks.
