Greens and Grains Power Bowl

Ingredients

2 bags (600 g) Europe’s Best Greens and Grains, Kale, Sweet Potato and Quinoa
1 avocado, peeled and sliced  
1/4 cup (60 mL) toasted sunflower seeds
2 hard-cooked eggs, peeled and halved
1 cup (250 mL) broccoli florets, steamed
1 cup (250 mL) shredded carrots 

Easy Vinaigrette:
2 tbsp (30 mL) red wine vinegar
1 shallot, finely chopped
1 tsp (5 mL) Dijon mustard
1/4 tsp (1 mL) salt and pepper
1/3 cup (75 mL) olive oil

Directions

  1. Cook greens and grains according to package directions. Divide evenly among 4 bowls.
  2. Arrange avocado over greens and grains; top with sunflower seeds, eggs, broccoli and carrots.
  3. Easy Vinaigrette: Combine vinegar, shallot, mustard, salt and pepper; whisk in olive oil until well blended. Drizzle over top of bowls.

Tips

Add protein, such as leftover cooked chicken or steak, or canned tuna, if you like.
