2x255 g package (24) Tenderflake® Tart Shells
250g (8 oz) goat cheese
½ cup granulated sugar
2 tsp vanilla extract
2 Naturegg™ Nature’s Best™ Eggs
2/3 cup sour cream
500g (1 bag frozen) Europe’s Best® Fruit Essentials Sun Inspirations Fruit Blend, thawed and chopped
2 tbsp honey
1 tbsp finely grated orange zest
1. Preheat oven to 350 F (180C). Arrange tart shells on a rimmed baking sheet. Bake for 10 to 12 minutes or until lightly golden; cool slightly.
2. Meanwhile, beat goat cheese with sugar and vanilla, until just combined; stir in sour cream. Divide mixture evenly among tart shells. Bake, on bottom rack, for 15 minutes or until set. Cool to room temperature: chill until completely set.
3. Toss fruit with honey and orange zest; chill until ready to serve. Divide fruist salsa evenly among tart shells just before serving. Makes 24 tarts.
Tarts and fruit mixture can be refrigerated separately for up to 1 day.
