Fruit Stuffed Cheese Crepes

Total Time: 50 mins.
Prep Time: 30 mins.
Cook Time: 20 mins.
Serves: 8 crepes

Ingredients

Crepes:

1¼ cups (300mL) milk
2 eggs
2 tbsp (30mL) melted butter
1 cup (250mL) All Purpose Flour
pinch salt
¼ cup (50mL) sugar
butter for greasing pan

Fruit Filling:

500g (1 bag) Europe’s Best® Fruit Essentials™ Berry Cherry Medley, frozen
¼ cup (50mL) sugar
½ cup (125mL) berry juice such as cranberry, blueberry, etc.
1 ½ tbsp (22mL) cornstarch
2 tbsp (30mL) water

Cheese Filling:

1 cup (250mL) cottage cheese
¼ cup (50mL) Greek Gods® Traditional Plain Greek Style Yogurt, Organic
¼ cup (50mL) brown sugar
1 tsp (5mL) vanilla
Sliced toasted almonds for garnish, optional

Directions

Crepes: 

  1. Mix all ingredients in blender until smooth. Refrigerate at least 30 minutes. 
  2. Grease a 9” (22cm) crepe or frying pan with butter and heat over medium high. 
  3. Drop batter into hot pan and quickly swirl batter until it covers bottom of pan. 
  4. Cook until bubbles form, about 1 minute, turn and cook on other side until brown. 
  5. Continue with remaining batter. 

Fruit Filling: 

  1. Combine fruit, sugar and juice in medium saucepan. 
  2. Bring to a low boil. 
  3. Combine cornstarch and water in small bowl and add to hot fruit mixture. 
  4. Cook on low, until fruit thickens, about 2 minutes. 
  5. Transfer to a bowl and refrigerate.

Cheese Filling: 

  1. Mix all ingredients in blender. 

Assembly: 

  1. Place crepe on flat surface. 
  2. Spread bottom half with cheese filling, leaving about ½” (1cm) border from edges. 
  3. Top with fruit. Fold sides of crepe over filling and roll up starting from the bottom. 
  4. Repeat with remaining crepes. 
  5. Place on serving dish and garnish with sliced almonds, if using.

Makes 4 servings (2 crepes per serving)
