12 oz (350 g) spaghettini
1 pkg (500 g) Europe’s Best Imperial Blend Vegetables, thawed
2 cups (500 mL) pre-shredded coleslaw mix
1/2 cup (125 mL) prepared Asian-style salad dressing
2 tbsp (30 mL) sesame seeds
1 tbsp (15 mL) sriracha hot sauce
2 tbsp (30 mL) chopped roasted peanuts
1. Cook spaghettini according to package directions. Rinse with cold water and drain well.
2. Toss together spaghettini, Europe’s Imperial Blend Vegetables, coleslaw mix, dressing, sesame seeds and hot sauce until well combined. Refrigerate until chilled. (Make-ahead: Refrigerate in airtight container for up to 2 days.) Garnish with roasted peanuts.
For a gluten-free version, substitute vermicelli rice noodles for spaghettini. Or substitute soba noodles for a whole wheat option.
