Coconut Banana Berry Layer Cake

Show off your baking savvy with this showpiece dessert that (shhh...don't tell!) is actually easier to prepare than it appears.

Cake:

3 Naturegg™ Omega 3 Eggs, separated
2/3 cup granulated sugar, divided
1/4 tsp salt
3/4 cup cake and pastry flour, sifted
1/4 cup icing sugar

Filling:

1 pkg (8 oz) brick-style plain cream cheese, softened
3/4 cup icing sugar
2 tsp vanilla extract
1 cup Lactantia® 35% Whipping Cream
1 bag (600 g) Europe's Best® Bananas & Berries, frozen
1/2 cup toasted sweetened flaked coconut

Directions

  1. Cake: Preheat oven to 350°F (180°C). Line a 15 x 10-inch rimmed baking sheet with parchment paper; grease well.
  2. Combine yolks with half the granulated sugar and the salt in a heat-proof bowl set over a saucepan of simmering water; beat for 2 to 3 minutes or until pale yellow and doubled in volume. Set aside.
  3. Beat egg whites in a clean bowl until foamy. Gradually beat in remaining granulated sugar until soft peaks form. Alternately fold flour and egg white mixture into egg yolk mixture until uniformly combined. Spread evenly onto prepared baking sheet.
  4. Bake for 12 to 14 minutes or until cake springs back when lightly touched; cool completely in the baking sheet. Turn cake onto a kitchen towel dusted with half the icing sugar. Carefully peel off parchment paper. Dust top of cake with remaining icing sugar. Cut cake crosswise into 3 equal rectangles; trim edges.
  5. Filling: Beat cream cheese with icing sugar and vanilla until smooth. In a separate bowl, beat whipping cream until very stiff; fold into cream cheese mixture. Chill until ready to assemble cake.
  6. Meanwhile, par-thaw fruit on a paper towel-lined tray for 30 minutes. Place one cake layer on a serving platter; spread with one-third cream mixture and top evenly with one-third each fruit and coconut; repeat layers twice. Chill for at least 2 hours or up to 6 hours before slicing.

Makes 8 to 10 servings.

 

Tips

TIP: Separate bananas from berries when par-thawing and use in bottom two fruit layers.
